Cover with cold water. Add 1 Tbsp salt. Bring to a boil. Cover and reduce heat. Cook for 20 minutes or until fork tender. Preheat the oven to 350 degrees F.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Drain and mash potatoes. Add butter, chives, and sour cream. Mix well.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the cheese and half of the bacon. Mix well.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spread into an 8&#215;8 pan. Bake for 20 &#8211; 25 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the fried onions and the last of the bacon bits.
