Make the roux: In a large pot, heat the vegetable oil over medium heat. Add the flour, and cook while stirring constantly for about 15 minutes, until the mixture turns a deep brown color (this is the roux).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. Saut\u00e9 the vegetables: Add the diced onion, bell pepper, celery, and garlic to the pot with the roux. Cook for 5-7 minutes until softened.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3. Add the meats: Stir in the chicken and sausage, and cook for about 5 minutes until the chicken is browned.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4. Simmer the gumbo: Add the diced tomatoes, chicken broth, smoked paprika, thyme, bay leaf, and cayenne pepper. Bring to a simmer and cook for 30 minutes, stirring occasionally. Season with salt and pepper to taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5. Add the shrimp: Once the gumbo has simmered and thickened, add the shrimp and cook for an additional 5-7 minutes until the shrimp are cooked through.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6. Garnish and serve: Stir in the chopped parsley and green onions.
