To enhance the fan experience at the RP Funding Center, Spectra Food Services & Hospitality is bringing delicious, plant based foods to one of the Jenkins Arena concession stands.
The Lemon Street Café, the brand new themed concession stand will feature 100% plant based (containing no animal products or products produced by animals) items that will be served at the concession stand. The concession stand opened for the Lakeland Magic home opener on Saturday, November 16.
“Plant based food is the hottest trend in the food industry, so we are thrilled to offer these new options to our guests. This is the first 100% vegan concession stand at any of Spectra’s 250+ food service venues, and I believe the first at any sports venue in the State of Florida,” said Tim Mahler, Spectra Food Services General Manager at the RP Funding Center.
The Lemon Street Café, will showcase vegan options and will also have some standard concession items like soft pretzels and chips and salsa with jalapenos. Spectra will feature a changing menu of items throughout the year created by Chef Casey.
Some of the health conscience menu items include:
- Bibb lettuce Banh Mi, white soy braised faro, chili spiced vegetables, toasted sesame seeds
- Thai noodle bowl, alfalfa sprouts, ginger, garlic, cashews, mushrooms, spinach, carrot, chilled umami broth
- Edamame pods tossed with spicy soy and fresh ginger
- Coconut curry, Rice noodles, dehydrated peas, seasonal vegetables, Thai basil
- Vegetable fried faro, fresh carrots, mushrooms, sprouts, umami broth, sesame seeds
