15 total violations, with 4 high-priority violations:
- High Priority – Dented/rusted cans present. See stop sale. Observed two Casa Solana Black Beans dented in dry storage area.
- High Priority – Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed and tested 0 ppm for chlorine sanitizer. Operator had tech come to assist and fix ware washing machine. Retested at 50 ppm. **Corrected On-Site**
- High Priority – Time/temperature control for safety food hot held at less than 135 degrees Fahrenheit or above. Observed mashed potatoes temperature at 126°. Operator was able to heat food to 171°. **Corrected On-Site**
- High Priority – Toxic substance/chemical stored by or with food. Observed sanitizer bucket stored next to burger buns and food prep under shelf at cook line across from stove. Operator removed bucket when prompted. **Corrected On-Site**
- Intermediate – Cutting board(s) stained/soiled. Observed at cooking line.
- Basic – Build-up of grease/dust/debris on hood filters. Observed at cook line
- Basic – Equipment and utensils not properly air-dried – wet nesting. Observed in ware washing storage area.
- Basic – Fan cover in walk-in cooler/freezer has accumulation of dust or debris. Observed dust on walk in cooler.
- Basic – In-use tongs stored on equipment door handle between uses. Observed tongs stored on oven door handle. Operator removed from door handle when prompted. **Corrected On-Site**
- Basic – In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed scoop handle not above flour in container. Operator removed the scoop handle when prompted **Corrected On-Site**
- Basic – Light not functioning. Observed lights burned out in kitchen above steam table ,ware washing and food preparation.
- Basic – No handwashing sign provided at a hand sink used by food employees. Observed at hand washing sink at the end of the cook line. Operator made hand washing sign for hand washing sink. **Corrected On-Site**
- Basic – Single-service articles not stored inverted or protected from contamination. Observed single serve items not inverted at the end of the cook line. Operator did invert items when prompted. **Corrected On-Site**
- Basic – Wet wiping cloth not stored in sanitizing solution between uses. Observed wet cloths in Cutting boards at cook line.
