Ingredients:

1 lb ground beef

1 onion, chopped

1 can (15 oz) black beans, drained and rinsed

1 can (8 oz) corn, drained

1 can (4 oz) green chilies, diced

1 package (1 oz) taco seasoning

1 cup cheddar cheese, shredded

1/2 cup sour cream

1/2 cup salsa

1 package (8 oz) cornbread mix

1 egg

1/3 cup milk

Directions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the casserole.

2. Cook the Beef and Onion: In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is no longer pink. Drain any excess fat from the skillet.

3. Combine Ingredients: Stir in the black beans, corn, green chilies, taco seasoning, and 1/2 cup of shredded cheddar cheese. Spread this mixture evenly into a greased 9×13 inch baking dish.

4. Prepare the Sour Cream and Salsa Layer: In a small bowl, combine the sour cream and salsa. Spread this mixture over the beef and bean layer in the baking dish.

5. Prepare the Cornbread Topping: In another bowl, prepare the cornbread mix according to the package instructions, using the egg and milk. Spread the cornbread mixture over the sour cream layer in the baking dish.

6. Add the Remaining Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the cornbread mixture.

7. Bake the Casserole: Bake the casserole in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
