Watermelon Cupcakes

Try these delightful watermelon cupcakes for your summer gatherings. Lime-infused cake, creamy frosting with a hint of watermelon, and chocolate chip “seeds” create a fun and delicious treat everyone will love.

Ingredients:

– 1 box white cake mix (18.25 ounces)

– 1 box lime Jello (not sugar-free) (3 ounces)

– 3 egg whites

– 1/3 cup vegetable oil

– 1 1/4 cups water

– 8 ounces white chocolate, melted

– 1/2 cup butter, softened

– 4 cups powdered sugar

– 1/2 teaspoon Kool-Aid powdered mix (watermelon flavor)

– 3-4 tablespoons milk

– 3/4 cup mini chocolate chips

Directions:

1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

2. In a mixing bowl, combine the white cake mix, lime Jello powder, egg whites, vegetable oil, and water. Beat for 2 minutes until well blended.

3. Fill each cupcake liner about 2/3 full with the cake batter. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Be careful not to overbake. Allow the cupcakes to cool completely.

4. Once the cupcakes are cooled, spread melted white chocolate over the top of each cupcake. Let the chocolate set while you prepare the frosting.

5. In a stand mixer or using a hand mixer, beat the softened butter with powdered sugar, Kool-Aid powdered mix, and milk until fluffy and smooth, about 3-5 minutes.

6. Transfer the frosting to a piping bag fitted with your desired tip (such as 6S). Pipe the frosting onto each cupcake.

7. Immediately sprinkle mini chocolate chips over the frosted cupcakes to resemble watermelon seeds.
