- 4 medium potatoes, peeled and cubed

- 1 teaspoon paprika
For the Gravy:
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken or beef broth
- 1 teaspoon Worcestershire sauce
- ½ teaspoon dried thyme
- ½ teaspoon onion powder
- Salt and pepper to taste

Instructions
Step 1: Season & Sear the Pork Chops
- Pat the pork chops dry with a paper towel.
- Season both sides with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Sear the pork chops for 3-4 minutes per side until golden brown. Remove and set aside.
Step 2: Cook the Potatoes
- In the same skillet, add the cubed potatoes.
- Cook for 5 minutes, stirring occasionally, until slightly browned.
- Remove the potatoes and set aside with the pork chops.
Step 3: Make the Gravy
- Reduce heat to medium and melt the butter in the skillet.
- Whisk in the flour and cook for 1-2 minutes until golden.
- Slowly pour in the broth while whisking to avoid lumps.
- Add Worcestershire sauce, thyme, and onion powder.
- Simmer for 3-4 minutes until the gravy thickens. Season with salt and pepper.
Step 4: Combine & Simmer
- Return the pork chops and potatoes to the skillet, coating them in the gravy.
- Cover and simmer on low heat for 20-25 minutes, or until the pork is fully cooked (internal temp: 145°F / 63°C) and the potatoes are tender.
